On Monday, February 27th, we will celebrate Clean Monday-which is 50 days before Orthodox Easter. It marks the beginning of Lent and is also referenced as “Ash Monday”, ”Pure Monday” or in Cyprus “Green Monday.

Traditional cuisine is often seafood without backbones- such as shellfish, octopus, mussels, & shrimp.
